Visiting Chef Series

Join us for our Visiting Chef “Farm-to-Table” Cooking Classes at Dog Mountain Farm this summer.

The School will be offering summer cooking classes to give students an opportunity to create local, seasonal fare through a farm-to-table experience. As part of the  Visiting Chefs series, from June–September, local area chefs will teach students how to transform organic, fresh ingredients into a well-balanced, healthy seasonal menu. The classes will be taught in the farm’s outdoor kitchen with a stunning view of the Cascade Mountains.

The day will begin with a brief introduction of the farm by owner Cindy Krepky, then followed by the chef and the students heading to the gardens to harvest ingredients for the day’s menu, depending on the fresh varieties. Together in the cooking class, they will transform them into a beautiful, well-balanced summer meal. Additionally, students, will learn valuable cooking techniques and tips on topics such as edible flowers for salads and desserts, brining poultry, and much more. Afterwards, students will be seated in the orchard at tables decorated with white linen and beautiful garden flowers to enjoy their 3-course lunch paired with Washington wines.

Outstanding local chefs who are passionate about sustainable farming and cooking with fresh ingredients have been recruited to teach the classes.

Pranee Khruasanit Halvorsen – best known as Praneee – learned to cook from her mother and grandmother in her home village of Phuket, Thailand. Her earliest kitchen chores included grating coconut, pounding curry paste and cooking rice. Today, Pranee is the owner of I Love Thai Cooking. She shares her enthusiasm and passion for teaching at numerous area culinary schools and home kitchens, hosts interesting Seattle International District tours, caters Thai parties, and leads an annual culinary tour to Thailand and Southeast Asia. Her cooking style and recipes focus on fresh Thai ingredients and reflect her family traditions.

Olaiya Land's love of food grew out of the many years she spent studying, cooking and eating in Paris and Brussels. Locally she worked the restaurant scenes at La Medusa and Boat Street Kitchen before becoming the chef and owner of Olaiya Land Catering, which emphasizes fresh, seasonal, local and organic ingredients. When she's not in the kitchen or teaching classes, Olaiya can be found gardening, knitting or hosting fundraising dinners for Women for Women International.

Becky Selengut is a graduate of the Seattle Culinary Academy, has had stints at La Medusa and La Spiga restaurants, and three years at the Herbfarm restaurant. She is the chef/owner of Cornucopia, a private chef and cooking instruction company and founded SeasonalCornucopia.com, a Web site devoted to seasonal and local food. Becky is co-author of the "Washington Local and Seasonal Cookbook," runs the blog, "Chef Reinvented," and is working on a new cookbook on sustainable seafood.

Lesa Sullivan is a graduate of the Seattle Culinary Academy, and has been cooking, catering, teaching, and writing in the Pacific Northwest since 1998. She is the proprietor of LesaCooks.com Personal Chef Service, and author of the blog “The Pink Hobart: Food, Fun and Narrow Escapes in the Kitchen” and the Seattle PI’s reader blog, “Fork It Over.” She shares a Seattle kitchen with her husband, stepson, and a well-fed Siberian cat named Anoush ("sweet" in Armenian”).

Lynne Vea is a graduate of the Executive Chef Program at Le Cordon Bleu, Paris. She has been in the food industry for 20+ years, having worked as an executive chef for several private establishments and the Hyatt Hotels in San Francisco. Today she teaches cooking classes locally and owns a food styling business. She’s also a frequent guest chef on King 5’s “Gardening with Ciscoe” series where she demonstrates delicious recipes using seasonal ingredients. Lynne loves to collect old cookbooks, hunt for wild berries and mushrooms, and cook seven-course dinners where the guests are encouraged to dance and cavort between courses.

All classes take place at Dog Mountain Farm in Carnation from 11 AM–3 PM. Class size is limited to 20 students. Cost is $85 per class.

Cancellation Policy
The School regrets not being able to offer refunds on classes except in the instance of cancellation of class due to insufficient enrollment. In the event you are unable to attend a class you have already paid for, you may apply your tuition fee toward a future class.
